The Royal icing flowers can be stored for months, wrapped in paper towels or tissue, then stored in airtight containers free from tiny ants. High levels of humidity is the enemy of Royal icing flowers so make sure you do not pipe or start a project when it is raining. If you have made the flowers and it started raining, place them immediately inside a room, close the door and windows then wrap the dried the dried flowers in tissue or kitchen paper towels. Place in plastic then store inside sealed containers. Your dried flowers can last up to a year if you store them PROPERLY, as mine lasts for years. New York air is dry, plus i have tons of paper towels to use (they are cheap_ so i make sure the flowers are protected by excessive humidity just in case. There are no ants in New York :) so they cannot invade my pretty and adorable edible flowers.
The best thing about having dried up prepared flowers is that i can simply top my cakes and cupcakes at a whim. Presto! You have a cake done in a jiffy, all you need is to bake a cake. My buttercream icing is already thawing, just whip it before using and ice the cake. My favorite buttercream is the Italian Merengue version because i use the eggwhites leftover from my Ensaimadas. I find this icing less sweet, more stable in high heat temperatures and pretty delicious as well. Just use Anchor if you want it extra special.
